In 2018, the winery began converting the vineyards to organic viticulture. The winemaking process remains traditional. After optical sorting, the must is fermented, then aged for 18 months in a proportion of new oak that varies between 50% to 90%, depending on the vintage.

The soil in the St. Julien area is also a key factor in the exceptional quality of these red wines. The terroir primarily consists of gravel and stones, which absorb heat from the sun during the day and release it at night, providing the much-needed warmth and excellent drainage for the grapevines. Additionally, this soil composition encourages the grape roots to delve deep into the earth, absorbing more nutrients, resulting in wines with powerful structure and complexity. In the St. Julien region, the grape varieties mainly include Cabernet Sauvignon, Merlot, and Petit Verdot. The combination of these three varietals brings balance and elegant flavors to the wines. Cabernet Sauvignon contributes rich black fruit flavors and refined tannins, while Merlot adds smoothness and maturity, and Petit Verdot is responsible for providing intricate aromas and structure. Winemaking in the St. Julien region is highly focused on tradition, which sets these red wines apart. Winemakers carefully monitor the fermentation process to extract the maximum flavor and tannins from the grapes. The wines are then aged in oak barrels, adding further complexity and structure to the final product.

In the Saint-Julien appellation of the Left Bank of France, the primary grape varieties used are Cabernet Sauvignon, Merlot, and Petit Verdot.
This estate employs 70% Cabernet Sauvignon, which brings abundant flavors of black fruits such as blackberry and blackcurrant, along with elegant tannic structure. Cabernet Sauvignon is typically the predominant component in Left Bank red wines, imparting acidity and robust characteristics that allow the wine to age gracefully over time. The remaining 30% is composed of Merlot, contributing smoothness and maturity, resulting in a rounder and velvety texture.
